💚 Planet-Friendly Vegan Pistachio Ice Cream Recipe

🌱 What You’ll Need:

  • 2 cups pistachio milk (unsweetened)

  • 1 cup raw pistachios (unsalted, soaked in water for 4 hours or overnight)

  • 1 cup allulose (a zero-calorie sweetener that won’t spike your blood sugar)

  • 1 ripe avocado (for silky creaminess)

  • 1 tsp vanilla extract

  • 2 tsp almond extract

🌀 How to Make It:

Step 1: Drain your soaked pistachios and toss them into a high-speed blender or food processor. Blend until smooth.

Step 2: Add in pistachio milk, avocado, allulose, vanilla, and almond extract. Blend everything until creamy and fully combined—no chunks!

Step 3:

  • With Ice Cream Maker: Pour mixture into your ice cream maker and churn according to instructions (usually 20–30 mins).

  • Without Ice Cream Maker: Pour mixture into a freezer-safe container. Freeze for 3–4 hours, stirring every 30 minutes for the first 2 hours to prevent iciness.
